1/8c Olive oil
1 Onion, chopped
1in piece of fresh ginger, chopped, or 1 tsp dried ginger
1/4c Swiss Chard Stalks (or 1 piece of celery)
8 Plum Tomatoes
3c Water or Stock.
Sauté onions and ginger in olive oil. Add Chard Stalks and sauté some more. Coarsely chop tomatoes and tomatillos and add to the pot with the water or stock. Cover and cook. Blend with emersion blender or process in a food processor until smooth. Add Curry powder to taste. Enjoy hot or cold.
